How Arsenic in Food and Soil Could Impact Human Health

A new study published in Environmental Science and Technology found that the levels of arsenic found in food and soil samples have been rising over the past two decades. This increase in arsenic is believed to be linked to changes in agricultural practices, such as the use of fertilizer and pesticides, as well as increased industrial activity.
In the study, researchers analyzed data from over 7,000 food and soil samples collected from around the world between 2000 and 2020. They found that levels of arsenic in food samples had increased by 15% over the 20-year period, while levels in soil samples had increased by 40%.
The findings of this study are concerning for two reasons. First, arsenic is a known carcinogen, meaning that it can cause cancer. Second, arsenic can enter the food chain through contaminated soil, and therefore can end up in our food. Therefore, it is important that we take steps to reduce the levels of arsenic in our environment.
